Sugar-free Wholemeal Apple Cake

Gosh, it’s been a while since I last did a food and drink post! It’s not a topic I write about much nowadays, but I spent some time cooking over the weekend, and based on my Instagram stories poll, I’ve decided to share the recipe. This one is a sugar-free wholemeal apple cake. Since the possible Crohn’s diagnosis, I’ve been watching what I eat more. It’s advised to cut back on the sugar, but me being me and having a sweet tooth wanted to find a loophole (guilty). There was some wholemeal flour and xylitol (a natural sweetener) in the cupboard, so I adapted my grandma’s Victoria sponge recipe. Plus, it’s so easy!

Sugar-Free Wholemeal Apple Cake Recipe pinterest image

Ingredients:

6oz wholemeal self-raising flour (we’re going ounces today, it’s always been the case with this recipe)

6oz xylitol (I use the Total Sweet brand)

6oz margarine (I use a plant-based margarine such as Bertoli which is healthier than butter)

3 eggs

1 apple, peeled and grated (I used Braeburn as this is naturally sweet, whereas I think you may have to add some sugar with cooking apples)

Handful of sultanas (optional)

Sprinkle of cinnamon (optional, I didn’t measure an exact amount. I’m a cinnamon fan, but add as little or as much as you want)

Instructions:

  1. Preheat the oven to 170°c fan.
  2. Cream the xylitol and margarine together in a bowl (I’m not an all-in-one fan).
  3. Add the eggs and sieve the flour into the bowl.
  4. Fold together until the mixture is smooth.
  5. Add the grated apple, sultanas and cinnamon and stir.
  6. Grease a circular cake tin (mine was approx. 23cm in diameter) and pour in the mixture.
  7. Bake for approximately 20 minutes, or until the top is golden brown and cracks start to appear. It may seem like it is still not baked, but remember that the juice from the apple creates extra liquid.
  8. Enjoy! It would look more presentable with some icing sugar/icing, but we’re keeping it healthy here!
